Easy tofu noodle bowl 

Tofu ingredients 400g block of firm tofu
1 tsp garlic powder 
1 tbsp oil 
Salt/pepper 
Juice of a lime 2 tbsp maple syrup 4 nests of rice noodles 2 tbsp tamari (or soy sauce) 1 tbsp sesame oil 2 carrots, cut into strips 1 red pepper, cut into strips 1/4 red cabbage, cut into strips 1/2 large cucumber, sliced 1 cup edamame beans Toppings Cashew nuts Sesame seeds

 1 For the tofu, slice the block into small rectangles and season with lots of salt, pepper and the garlic powder. Add the oil to a griddle pan and fry the tofu on each side for 2-3 mins until seared. For the last minute of cooking drizzle over the lime juice and maple syrup

 2 Cook the noodles as per packet instructions, drain and add to a bowl with the sesame oil and soy sauce 

3 Prepare you veg and when the tofu is ready, divide into 4 portions and top with some toasted cashews and a sprinkle of sesame seeds.
