Today I'm sharing one of my absolute favourites, a super easy recipe. A side dish of Korean spicy cucumber salad called oi mujim. If you have seedless cucumbers, you can make a delicious banchan in just a few minutes. I have made this dish everywhere I go. everyone loved it. Who doesn't like cold, fresh, chewy, spicy pickles? Every bite is juicy and delicious!

A key tip for this recipe is to prepare and mix just before serving. It's a refreshing spiciness that's perfect for summer BBQs, and it's a little spicy!

Ingredients (Serves 4)
1 English cucumber (or 2 to 3 kir by cucumbers), washed
¼ cup thinly sliced onion
1 green onion, chopped
2 garlic cloves, minced
2 tablespoons soy sauce
2 teaspoons Korean hot pepper flakes (gochugaru)
2 teaspoons sesame oil
2 teaspoons toasted sesame seeds
1 teaspoon sugar (optional)

Cut the cucumber in half lengthwise and thinly slice diagonally. Place the cucumbers in a large bowl. Add onions, scallions, garlic, soy sauce, chilli flakes, roasted sesame oil, sesame seeds, and sugar. Mix well with a spoon until the sugar dissolves well. Enjoy with rice, pasta, or BBQ.
